This review investigates black rice’s photochemistry, functional properties, food applications, and health prospects. There are different varieties of rice available in the world. The origins this product can be traced back to Asian countries. is also known as prohibited rice, emperor’s royal’s rice. Black composed nutrients including fiber, protein, carbohydrates, potassium, vitamin B complex. It contains an antioxidant called anthocyanin tocopherols. Antioxidants found mostly foods that or dark purple. Due its nutritious density, high fiber level, content, a good alternative white brown Utilizing various enhance nutritional value transformed into items. Many noncommunicable diseases (NCDs) prevented by eating daily, cancer cells, atherosclerosis, hypertension, diabetes, osteoporosis, asthma, digestive health, stroke risk. aim was discuss role properties formation against diseases.
